Nearly four dozen new foods are being added to this year’s Minnesota State Fair.

The additions announced Wednesday include bacon-wrapped grilled shrimp on a stick, Cajun pork rinds, peanut butter and jelly malts, and pork belly sliders, made with thickly cut bacon. Selections also include chocolate chili ice cream, deep-fried bread pudding and deep-fried olives, a grilled glazed doughnut, and macaroni and cheese with lobster.

“We're bringing in those 47 to debut this year, and that will be added to our list of 450- plus different foods, at about 300 different concession locations that already exist on the fairgrounds,” said Brienna Schuette, spokeswoman for the state fair.

Seven new food vendors are featured this year, including a state fair version of Mancini's Char House, and Pitchfork Sausage, a new gourmet sausage booth.

Frozen caramel corn made with liquid nitrogen is another new treat this year. The cheesy caramel corn is flash frozen by dipping it in liquid nitrogen.

"When they pull it out it's actually steaming off. And they wait a few seconds before it's actually safe to serve it to you because it’s so cold," Schuette said.

The fair opens Aug. 22 and runs through Sept. 2.
